    Customers should examine all the items at the time of delivery and notify the company immediately in case of any damages and/or deficiencies.

    In no event will wines priced (HK$ listed price) at HK$1,000/bottle or more, and/or aged 10 years or older be returned or exchanged.

    If any wine is considered to be faulty, customer must notify the company within 2 working days for examination and return arrangement if applicable. And no complaints will be considered later than 2 working days of delivery.

    Wines stored at Hip Cellar will be subjected to the Terms and Conditions of Hip Cellar Limited. Any issues will have to be deal with Hip Cellar directly.

    Company reserves the final rights for any disagreements raised from this program.

    Vintage characteristics

    The Spring was very warm and dry with a heatwave arrived in June. Fortunately, Summer was cool (even cooler than average) with rain. September was warm and dry enabling the grapes to ripen fully, but the relative lack of heat in the key months of July and August meant to have a rather difficult vintage.

    Tasting note

    A blend of 91% Merlot and 9% Cabernet Franc. The nose offers up enticing licorice scents with a mixture of black fruits with black olive. The palate is tightly wound with chalky tannin, that licorice note continuing through to the finish that is linear and crisp.

    Vintage characteristics

    It  was a warm and dry vintage to produce rich and concentrated grapes with great fruit characters. Cool nights in August and September helped to maintain a high level of acidity in the grapes; highly apparent in the finished wine, this acidity is the final piece of the jigsaw which has imbued the wines with amazing freshness, creating perfect balance.

     

    Tasting note

    Blended with 70% Merlot, 25% Cabernet-Franc and 5% Cabernet-Sauvignon. Filled with notes of strawberries, wild berries, floral notes and hints of toasted oak. Impressed by the polished, lavish attack of sweet plums, crème de mûre and sumptuous Merlot fruit.

    Chris Ringland, a native Australian, began making wine at the age of twelve, and it’s been his passion ever since. Even he says he doesn’t know why, but Chris has been obsessed with winemaking since anyone can remember. After graduating from Roseworthy College (an Australian wine-centric college comparable to California’s UC Davis), he worked at New Zealand wineries for several years, then traveled to California to work the 1987 vintage. In 1988, he returned to Australia to study under Robert O’Callahan of Rockford, one of the leading cult Barossa Valley wineries.

    However Chris became pretty famous in 1993 when Robert Parker tasted his own Three Rivers Syrah. Every vintage since then he has received 99 or 100 points. Parker’s comments were that that wine was arguably the greatest syrah made in Australia. Now he is the senior winemaker at R Wines, Bodegas Alto Moncayo and Bodegas El Nido in Spain.


    Despite an extraordinarly wet and cool 2011 vintage, the Winter of 2011 and the 2012 growing season saw a dramatic return to dry conditions. Soil moisture reserves were at their highest levels in 7 years. This held the vines in good stead, as the relatively dry and mild Summer unfolded. Older Shiraz vines produced a slightly higher than normalyield, although cropping levels and canopy balance were perfect for the conditions. The outcome was as good as anyone could have wished.The vintage started slower than usual, with fruit being picked at optimum ripeness, but the pace quickened ad favourable dry conditions continued. As usual, later maturing fruit showed great colour, depth and intensity.

    The wines are strong, rich and well structured. Slightly more classic compared to the relatively fruit driven 2010's.

    Deep crimson. Classic dried plum, blackberry, dark chocolate, paneforte aromas and flavours. Rich, voluminous and generous with superb fruit concentration, supple textures, and fresh long acidity. Very well-balanced and intuitive to the superb vintage conditions. Great value at price point.
