Clotilde Davenne
Clotilde Davenne, one of the most talented female winemaker in Burgundy. She grew up in the countryside, at the foot of the Morvan.
This childhood in nature forges his sensitive approach to the world. Everything is smells, flavors, colors, in a mixture of sensations every day renewed.
With her nose in the air and the taste buds on the lookout, she learns the scents of plants: lime blossom, acacia, mint, crumpled herbs, meadow roses, damp undergrowth…
There are also those from the garden: artichokes, peas, beans , which she often munched on the spot.
Games in the orchard: cherries, plums, raspberries and walnuts, until returning to the kitchen: jams, cottage cheese, cakes… Scent layers that are delicious.
Later, Clotilde wishes to take advantage of this sensitive potential: to make wine, a profession. This is how she decides to study oenology.
As a young graduate, she started out in the reds of Beaujolais, discovered the sparkling vineyards of California, before returning to acclimatize the whites of Burgundy in Chablis.
Cellar master, she practices the expression of the terroirs through the wines that she has been making since 1989 .
She started her own winery in 2004. She now has 30 hectares of small plots of vines spread over the appellations villages of Chablis, Saint-Bris and Irancy. The wines from this typical Burgundy vineyard are vinified that for each wine expresses all the characteristics of its various origins.
